Now that it’s September, the first day of Autumn will be here before we know it. Kids everywhere go back to school, leaves begin to change, and warm summer days turn into cool fall nights. Well, everywhere but here in Texas but a girl can dream, right?
My cocktail of the month is an Apple Cider Mimosa. I recently had a fantastically fun brunch with my husband and in-laws and realized that I don’t have enough champagne in my life. While my MIL and I sipped on endless mimosas over a brunch buffet cornucopia (hello Belgian waffles and prime rib!), I started thinking of other ways that might be fun to mix up the mimosa a bit. This recipe is only two ingredients, but you can always get fancy and dress up your glass with a sweet accessory. It’s an easy yet beautiful drink your guests will love. And it tastes like fall in a glass.
For my version, I used Tott’s but any inexpensive champagne will do. When mixing champagne into a cocktail I don’t think it’s necessary to spend big.
What you’ll need:
Extra dry champagne or sparkling wine
Apple Cider
(Optional) Cinnamon and sugar mix, honey
Prep:
(Optional) Dip the rim of a champagne flute into honey followed by cinnamon-sugar mixture.
Fill champagne flute 1/2 full with apple cider. Top with champagne.
Sip and enjoy an extra glass…or two. Brunch calories don’t count. 😉
