I was looking for an easy fall meal when I came across their Cape Cod Salad. It is perfect for fall because it has yummy fall ingredients like crisp apples, sweet cranberries, maple glazed turkey, and a tangy dijon and apricot preserve dressing. It’s healthy but loaded with flavor.
This salad was destined for a light wine pairing (ahem, rosé that’s your cue). The lovely team over at Pedernales Cellars sent over their Texas Dry Rosé and it was the perfect compliment. I love a dry rosé against all those sweet notes in the salad. Not to mention it looks nice with a fall tablescape.
To take this salad into winter, swap the turkey for roasted chicken and substitute pears and gorgonzola cheese for the cranberries and cheddar.
With the holidays basically here, I’m looking for ways to eat healthy but also indulge a little. This salad and rosé pairing is perfect on its own or as part of a larger holiday meal.
