This post has two meanings. I titled it “Last Weekend in Vegas…” because we went there last weekend but also because it was literally our last weekend in Vegas (at least for the foreseeable future). We’ve been to Las Vegas so many times, but we have not been since Covid hit. While we usually go for a birthday celebration (mine or his), we haven’t seen The Strip in about 3 years. With everything going on with our upcoming move to Amsterdam, selling the house, etc., I was more than ready for a weekend away. And though the saying goes, What happens in Vegas, stays in Vegas, I love our weekends here so much that I just can’t not share the love with all of you.
This post is done in the spirit of my Eat +Stay + Play travel guides. I didn’t feel it was fair to do a full E+S+P guide as we have been here so many times and we spent most of our time relaxing on this trip. But I did want to share where we stayed and especially the restaurants, as they were amazing. You can check out my other/older Vegas posts here:

Here’s what we did and how it went last weekend in Vegas…
We stayed at Aria again, which is a casino hotel on the Vegas strip we have stayed at many times before. Paul actually had some MGM Reward points for the room.
As soon as we landed, we grabbed a quick panini from the patisserie downstairs and headed for the pool. We had an early flight so it was nice to squeeze in an extra half day of pool time. I settled in with a rum punch and let the stress melt away.
Dinner Friday night was at Bazaar Meat by José Andrés at the Sahara. We have eaten here once before together and Paul has been here a couple of other times, too. I was looking forward to this meal all week and it did not disappoint!
Here’s what we ordered (we wanted to try a lot of things):
Cotton Candy Foie Gras
Bolognese “Sloppy Joes” Sliders
Classic Beef Tartare
Jamón Ibérico Sausage with Pan con Tomate
Wagyu Skirt Steak with Rosemary Mustard Sauce
Piquillo Peppers Confit
Galician-style Octopus with Potatoes
After dinner we played some Roulette and spent time in Aria’s casino. It was a great first day!
Saturday we spent the day at the Aria pool. I had rum punch again, and it’s become a new favorite poolside drink. We split a flatbread for lunch from the patisserie again. It’s a great grab-and-go option and the food is actually really good.

We played a few pre-dinner games and then had dinner at Zuma at The Cosmopolitan. I had never been here before but Paul has eaten here and at the one in Dubai. We love Asian food and a fun sushi dinner is usually on the schedule while in Vegas.
Here’s what we ordered (what can I say, we like to try A LOT of things):
Prawn and Cod Gyoza
Pork Belly Skewers
Vegetable Tempura
O Toro (fatty tuna)
Dynamite Spider Roll (soft shell crab)
Zuma Chirashi (salmon, tuna, seabass, and yellowtail rolls)
We slept in a bit on Sunday but not too late. We grabbed Starbucks and I played a few hands of video poker at The Bellagio. We always check out the Conservatory and Botanical Gardens at The Bellagio. I have only seen it in the fall, so it was really nice seeing it decked out in spring flowers. It smells so good and it’s always visually stunning. There were a lot of families taking Easter photos.
Our Easter lunch was at Sadelle’s at The Bellagio. This place is not only picture perfect, but the food was excellent. The decor reminds me of a place you’d see in Miami and after doing some research, I found a Sadelle’s in Coconut Grove! I recommend a reservation here, too, as the line to get in can be quite long. We opted to sit at the bar and were seated pretty quickly. I always love sitting at the bar at a place like this. I like watching the bartenders make fancy cocktails and it feels both festive and casual. We both got the same chicken sandwich and it was hands down one of the best chicken sandwiches I’ve ever had. A perfectly crispy chicken sits on a soft brioche bun and is topped with coleslaw and pickles. I might be drooling just thinking about it again. It was THAT good! The fries were perfect, too!
The remainder of Sunday was spent playing table games plus a new version of craps I had not seen before. I didn’t think I would like it, but it’s actually fun. There are no dealers, just a pair of dice that get tossed by this machine. You place bets electronically and the best part – you can sit the whole time. It was one of the most fun player experiences I had all weekend.
We have this tradition of eating at Lemongrass at Aria on our last night. You usually don’t need a reservation and they are open LATE. It’s more casual but the Thai food here is also really good. I was too hungry to take photos (sorry!) but we started with the Thai Style Chicken Wings. They were perfect, to say the least. I had Vermicelli X.O. Sauce with Crabmeat and Paul had the Singapore Noodles. Both hit the spot. This place also never disappoints.
We flew home Monday and picked up our girls from boarding, or “camp” as we like to refer to it. I think they had a good time, as they’re completely exhausted.
The best news of the weekend is that our house is under contract! We are thrilled to be moving forward and we can’t wait to be on a plane to Amsterdam soon! Lots to do before then, but this last trip to Vegas was the respite we needed to gear up for a busy few weeks.
